With the onset of cold weather, we have fun creating different recipes featuring our smoothie cubes! This vegan muffin recipe is without a doubt our favourite. This is the perfect solution for a healthy, simple and fast lunch.

 
Evive muffins
 
INGREDIENTS

 

  • Samourai Evive Cubes
  • 1 cup of Buckweat Flour
  • 1 cup of quick oatmeal flakes
  • 1/2 cup cane sugar
  • 1  teaspoon baking powder
  • 1 tsp chia seeds
  • 1 pinch of salt
  • 3/4 cup vanilla almond milk
  • 1/4 cup vegetable oil
  • 1 chia egg (1 tbsp ground chia seeds + 3 tbsp water)
  • 1/2 tsp ground cinnamon

 

Evive muffinSTEPS
  1. Combine dry ingredients in a bowl
  2. Combine liquid ingredients in a second bowl
  3. Gradually mix the two bowls
  4. Grease a muffin pan and pour in half of the mixture
  5. Add one or two Evive cubes in the center of each mold
  6. Pour the second half of the mixture as well and cover the smoothie cube
  7. Bake for 12-17 minutes at 350°, depending on the intensity of your oven.
